Cake is a baked flour confection usually sweetened with sugar or honey; it is mixed with eggs and often, but not invariably, with milk and fat; and it has a porous texture from the mixture rising during cooking. Though this description does not serve to fully portray just how fantastic cake is, it does give a broad idea to the poor souls who may not have yet had the life-altering experience of tasting it.

Popular Flavours of Cake

Though most cakes found in a grocery store are usually a combination of chocolate or vanilla with a variety of fruit and caramel topping, the extent of existing cake flavours is quite staggering. Popular wedding flavours also include lemon, key lime, spice (pumpkin spice), orange, fudge marble, and tiramisu. Banana cake, zucchini cake, and the chocolate varieties thereof are considered less "fancy" varieties of cake, though they can be just as tasty. For those of us who are not capable of making a cake from scratch but still want a unique cake, below is a fun recipe that incorporates cake mix to make a fantastic dark chocolate coconut cake:

Dark Chocolate Coconut Cake Recipe:

  • 1 package devil's food cake mix plus ingredients to prepare cake
  • 1 1/3 cups strong coffee

Coconut Filling
  • 1/2 cup evaporated milk
  • 2 tablespoons butter
  • 3 cups miniature marshmallows
  • 14 ounces shredded coconut

  1. Preheat oven to 350 degrees. Coat 2 layer cake pans with non-stick cooking spray.
  2. Prepare cake mix according to package directions, but substitue coffee for water. Divide batter between prepared pans.
  3. Bake 23 to 25 minutes
  4. Cool completely on wire rack.
  5. For filling, heat milk and butter in medium saucepan over medium heat. Bring to a boil
  6. Add marshmallows, stir until smooth
  7. Stir in coconut
  8. Remove from heat and allow to cool completely
  9. Spread toping between layers of cake, and use as topping with whipped cream and chocolate chips if desired.

Baking Tips

Recipe says:
Instead Use
Why this is better
half a cup of oil
An extra egg or two
this adds more iron to your cake and makes the batter thicker in case you want to add chocolate chips
skim milk
skim milk has the same consistency as water, but it adds calcium and vitamin D, and makes your cake more filling and nutricious.
bake at 350 degrees
Start at 375, then switch to 350 when the cake is in the oven
When you open the door, heat escapes from your oven, sometimes as much as 25 degrees. This means that your oven must reheat itself, and the hot rods underneath your pan can cause the bottom of your cake to burn.
